They also had to fight while riding the horse. So, it was important for them to practice using a sword or lance while riding. Young knights practiced on wooden horses . They would try to spear hanging rings while their horses were pulled along tracks. This is where the words “carousel” and “merry-go-round” come from. Instead of tracks, carousels eventually used a spinning plate. And on top of that, better mechanics made the horses move too: the carousel was born. How does centrifugal force work? When a carousel spins around, then you feel centrifugal force . It pushes your body toward the outside. The reason this happens is because of inertia. When you put an in motion , you give it energy – it is like pushing a car. Even when you stop pushing, it keeps rolling until the energy is used up. Carousels also “push” people; but they don’t push them in a straight line – they push them along a curve. What our bodies want is to move forward. It feels as if we are being pushed outward. Normally, we have two senses that tell it what to do: our sense of sight tells us in which direction our world is moving, more or less. It is our sense of balance which is more precise. For the first time ever, Dan- iels Kristallwellten invites guests to a pre-New Year’s Eve Gala on December 30, 2019, where head chef Michael Gruber will treat them to an exquisite menu boasting regional and exotic ingredients. Elegant ambiance In addition to special delicacies, guests can look forward to the Beletage’s elegant ambiance, with a view of the Crystal Cloud and the Giant, which will be lit up during the Light Festival. “We’ll make our guests’ eyes sparkle with a combination of light, crystal, and culinary delights,” says chef de cuisine Michael Gruber, who is already looking forward to the gala. The gala menu at Daniels Kristallwelten: • Aperitif • Amuse-bouche • Lobster – mango – Ka r lime • Beef filet – pumpkin – potato – black salsify – cabbage • Roasted almond – cuvée Sakanti Bali (premium chocolate) – grapefruit • Petit four • 1 glass of champagne at midnight and fireworks Price: 79.00 euros per person December 30, 2019, 19:30 Reservations by December 20, 2019 at reservations.kristallwelten@swarovski.com.64 Main course: roasted shoulder cut of veal with braised vegetables and thyme sauce Serves 4: 1.2kg shoulder cut of veal 100g carrots 100g celery 100g parsnips 50g onions 300g waxy potatoes 6 cloves of garlic 1 lemon 20g tomato paste 100ml dry red wine 200ml beef or vegetable broth, thyme, salt, pepper Directions: Rub a generous amount of salt, pepper, and olive oil into the shoulder cut and allow it to soak in. Cut the peeled vegetables into 2 cm cubes. Heat olive oil in a roasting pan and sear the shoulder cut on all sides. Remove the meat from the pan and let it sit. Put the diced vegetables (except the potatoes) in the roasting pan and slowly roast them until they are golden brown. Then add the tomato paste and roast it with the vegetables. Deglaze with red wine and allow it to meld completely. Add the broth and potatoes, placing the meat on top. Allow it to roast in the preheated roasting pan at 180 degrees for one and a half hours. Pour broth over it every 15 minutes. When cooked, add sauce, butter, thyme, grated lemon peel, salt, and pepper to the meat and vegetables to taste. If necessary, bind the sauce with a mixture of flour and water. Slice the meat and place it on a plate with the vegetables, adding sauce and a sprig of thyme to garnish. My goal is to have my experiences from the previous year reflected in the Pre-New Year’s Eve menu: which dishes went over particularly well, what did I learn when talking to our guests. That’s something I’d like to incorporate into it. It is also important for me to include my international experience in the menu, like with the combination of ravioli and Ka´ r lime, those are fusion ideas of mine. What are the highlights of the Pre-New Year’s Eve menu? Which courses would you like to emphasize in particular? One of the highlights is definitely the lobster. It is a luxury product that harmonizes fabulously with the Southeast Asian Ka´ r lime. We include mango in the accompanying bisque, a cream soup with a rich taste, to give the dish a fruity note that rounds it o¶ . It goes well with the season and the occasion. The Pre-New Year’s Eve menu is a gala menu, which means it can be a bit decadent and ostentatious.
